Sajji

Sajji is a native dish of the desert province of Sindh,Balochistan, Pakistan that is popular inBalochi cuisine. It consists of whole lamb, in skewers (fat and meat intact), marinated only in salt, sometimes covered with green papaya paste, stuffed with rice, then roasted over coals. Sajji is considered done when it is at the ‘rare’ stage. It is served with a special bread “Kaak”, “roti” or “naan”, which is baked in an oven, wrapped around a stone. Sajji is favourite of Balochistan natives, where most are nomads. Regional varieties are found with subtle differences in flavouring notably in the urban centres of Karachi, Islamabad or Lahore, uses chicken instead of lamb, and is roasted until it is medium or well-done.

Famous Sajji outlets in Karachi and Lahore are Tando adam and Quetta Sajji House and Food Street.

Recipe in Urdu:

چکن ڈیڑھ کلو (کھال سمیت)
نمک حسبِ پسند
ادرک لہسن ایک کھانے کا چمچ (پسا ہوا)
لیموں کا رس دو کھانے کے چمچ
سرکہ دو کھانے کے چمچ
چاٹ مصالحہ ایک چائے کا چمچ
من پسند کوکنگ آئل چار کھانے کے چمچ

پین میں ایک لیٹر پانی ڈال کر اس میں نمک، ادرک لہسن، لیموں کا رس اور سرکہ ڈال کر اچھی طرح ملائیں۔

چکن کو اس پانی میں دو سے تین گھنٹے کے لئے بھگو کر رکھ دیں۔

گہری کڑاہی میں برش سے من پسند کوکنگ آئل لگائیں اور درمیانی آنچ پر دو سے تین منٹ (2-3 mins) کے لئے گرم کرلیں۔

چکن کو پانی سے نکال کر کڑاہی میں ڈالیں اور ڈھک کر درمیانی آنچ پر آٹھ سے دس منٹ (8-10 mins) تک پکائیں۔

پھر احتیاط سے دوسری طرف پلٹ کر سات سے آٹھ منٹ (8 mins) مزید پکالیں۔

اگر پانی رہ جائے تو ڈھکن کھول کر تیز آنچ پر خشک کرلیں درمیان میں چاٹ مصالحہ چھڑکتے جائیں۔

سجاوٹ:ڈِش میں نکال کر سلاد اور رائتے کے ساتھ گرم گرم پیش کریں۔

نوٹ:سجّی کو دراصل سیخ پر بنایا جاتا ہے۔ لیکن گھر میں اس طریقے سے بنانے میں نہ صرف آسانی ہوتی ہے بلکہ ذائقہ بھی ویسا ہی آتا ہے۔

Ingredients

  • For Marinate:
  • Whole chicken or lamb leg with skin 1, 1/4 kg
  • Salt 2 tsp
  • White vinegar 1 tsp
  • Ginger garlic paste (mixed in half cup of water) 1 tsp
  • Sajji special powder Spice:
  • Roasted cumin seeds
  • Roasted cardamom
  • Roasted Green cardamom
  • Roasted coriander seeds
  • Roasted cloves
  • Roasted fennel seeds
  • Pomegranate seeds
  • Black pepper
  • (all the above ingredients in equal quantity)
  • Salt to taste

Cooking Directions

  1. Take a flat pan to soak the lamb leg or chicken for marinating.
  2. Fill the pan with water and then add salt, vinegar, ginger garlic paste and mix well.
  3. Soak the chicken or lamb leg in that mixture and leave for 1 hour.
  4. In the mean time prepare the special sajji spice powder. Make the powder of all the ingredients and mix them well.
  5. After an hour, pierce the chicken or lamb leg on the iron stick for BBQ or you can put it in steamer for about 1 to 1, 1/2 hour.
  6. To add the BBQ flavor put a piece of coal in the steamer.
  7. When the chicken or lamb leg is cooked fully, cut it into pieces and sprinkle the special spice at the end.
  8. Serve hot and ENJOY.
