Korma (sometimes spelled kormaaqormakhorma, or kurma) is a dish originating inSouth Asia or Central Asiawhich can be made with yogurt, cream, nut and seed pastes orcoconut milk; it is usually considered a type of curry.

گوشت آدھا کلو
(ادرک پچاس گرام (باریک کَٹا ہوا
دہی آدھا کپ
لہسن چھ جوے
پیاز تین عدد
گھی آدھا کپ
کیوڑہ آدھا کھانے کا چمچ
زعفران آدھا چائے کا چمچ
ہرا دھنیا حسبِ ضرورت
گرم مصالحہ حسبِ ضرورت
نمک حسبِ ذائقہ
لال مرچ حسبِ ذائقہ
پیاز کو گھی میں تَل کر انہیں باریک پیس لیں۔
گوشت کو گھی میں ڈال کر اچھی طرح بھون لیں۔
اب دہی، نمک، لال مرچ اور لہسن کو پیس کر ڈالیں۔
ان سب کو اچھی طرح بُھون لیں۔
پھر اس میں پسا ہوا پیاز، زعفران اور کیوڑا ڈال دیں۔
تھوڑا سا پانی ڈال کر ہلکی آنچ پر پکالیں۔
اب پسا ہوا گرم مصالحہ، ہرا دھنیا اور ادرک ڈال کر پیش کریں۔

Recipe in English:

Ingredients

  • Chicken 1 1/2 kg
  • Ghee or Cooking Oil 1/2 cup
  • Onion Chopped 1 cup
  • Ginger Ground 1 tbsp
  • Garlic Ground 2 tsp
  • Coriander Ground 1 tsp
  • Cardamoms 4
  • Cinnamon 4 sticks
  • Yogurt Beaten 1/2 cup
  • Milk 1 cup
  • Lemon Juice 1 tbsp
  • Keora Water 1 tbsp
  • Raisins 2 tbsp
  • Sugar to taste
  • Salt to taste

Cooking Directions

  1. Skin the chicken and cut into 12 pieces.
  2. In a saucepan heat the ghee.
  3. Fry the onion light brown.
  4. Add the chicken, cinnamon and cardamom.
  5. Stir-fry for 3 minutes.
  6. Add the ginger, garlic and coriander.
  7. Stir and fry until oil separates.
  8. Add the yogurt and milk, stir, cover and cook over low heat for 10-15 minutes.
  9. Add sugar, lemon juice, keora water and raisns.
  10. Keep over low heat, stir frequently, remove from heat when oil separates.
  11. Adjust taste with sugar and lemon juice.
  12. Serve hot with parata, chapatti, pullao, or boiled rice.
